Growing Tips
Direct sow outdoors 4–6 weeks before the last frost in spring, or in late summer for a fall harvest. Beet "seeds" are actually clusters of 2–3 seeds — sow ½ inch deep and 1–2 inches apart, then thin to 3–4 inches once seedlings emerge (thinnings are delicious in salads). Beets prefer loose, well-drained soil free of rocks, which can cause forked roots. Water consistently to prevent woody or cracked roots. Harvest baby beets at golf-ball size for the most tender texture, or allow to reach full size. Succession sow every 3 weeks for a continuous harvest. A light frost before harvest concentrates sugars for sweeter roots.
