The Gourmet Winter Green That Thrives When Nothing Else Will
When the garden goes quiet in the cold months, mâche steps up. This elegant, velvety-leafed green — a staple of French cuisine and upscale salad mixes — is one of the few vegetables that actually prefers cold weather, growing happily through frost and even light snow to deliver tender, nutty-flavored rosettes when fresh greens are hardest to come by. Botanical Interests Big Seeded Mâche seeds bring this gourmet green to your garden in a larger-seeded variety that's easier to sow and faster to establish.
Mâche (Valerianella locusta), also known as Corn Salad, Lamb's Lettuce, or doucette in France, forms small, spoon-shaped rosettes of deep green leaves with a mild, buttery, slightly nutty flavor that pairs beautifully with beets, walnuts, goat cheese, and vinaigrette. It's the salad green that makes winter feel like a luxury.
Why You'll Love It
- Exceptional cold hardiness — grows through frost and light snow; one of the most cold-tolerant salad greens available
- Gourmet flavor — mild, buttery, and nutty; a staple of French cuisine and premium salad mixes
- Big seeded variety — larger seeds are easier to handle, sow, and establish than standard mâche varieties
- Winter & early spring harvest — fills the hungry gap when other greens are unavailable
- Non-GMO & open-pollinated — save seeds year after year
- Low-maintenance — slow-growing but virtually care-free once established; minimal pest and disease pressure in cold weather
Growing Tips
Sow outdoors in late summer to early fall (August–October) for a winter and early spring harvest — mâche does not perform well in warm weather and will bolt quickly if sown in spring. Sow seeds ¼ inch deep in rows or broadcast in beds, and thin to 4–6 inches apart. Mâche prefers cool, moist conditions and well-drained soil. It grows slowly — allow 45–60 days to harvest. Harvest whole rosettes at the base, or pick outer leaves for a cut-and-come-again approach. In mild climates, mâche will self-sow and naturalize for a low-maintenance perennial patch of winter greens.
